About Wildcrust: Wildcrust is a family-owned and operated restaurant that specializes in wood-fired Neapolitan-style pizza. This is complemented by a focused yet dynamic menu of starters, small plates, and entrees. Our offerings range from chilled preparations to fried dishes and items cooked over a wood-fired grill. Led by Head Chef Miles Okabayashi, whose background includes fine dining and critically acclaimed restaurants in New York City and Los Angeles, our menu reflects a thoughtful balance of simplicity and refinement. In addition to our food program, we offer a curated selection of beer, wine, sake, digestifs, and aperitifs. Wildcrust opened in October 2024 and has established stable operations with strong potential for continued growth and development.
Position Overview: We are looking for an enthusiastic and reliable Expeditor with a strong work ethic and a desire to learn and grow with our restaurant. Applicants must have great attention to detail and a high standard of excellence. Qualified Expeditors must work well with others and possess a sense of urgency. This position reports to the Head Chef, Sous Chef, General Manager, and Assistant General Manager. Wildcrust has a single Expeditor responsible for all stations during each service. The Expeditor is responsible for firing all courses and dishes using paper tickets.
Essential Job Responsibilities:
- Oversee plating, quality control, and manage the timing and flow of dishes from kitchen to customer.
- Act as an intermediary between the front and back of the house, facilitating the flow of information and ensuring a seamless dining experience for customers.
- Organize tickets (both physical and KDS), order in, and fire dishes to ensure customers are served their food in a timely manner.
- Coordinate with the Chef, Sous Chef, and Line cooks to manage proper timing of food service and tickets.
- Coordinate with service staff to ensure that food ready for service is delivered to customers in a timely manner and per request from guests or servers.
- Ensure that all tickets are fulfilled to completion so that customers receive all items ordered and requested.
- Inspect all plates for proper presentation, garnish, and cleanliness.
- Monitor tables so that guests receive food at the appropriate time of service.
- Keep the working area stocked with appropriate plateware, utensils, and supplies needed for serving guests.
- Perform necessary side work at the start, during, and at the end of each shift as required by service station assignment, as well as opening and closing duties as needed.
- Maintain clean working areas.
- Be available to fill in as needed to ensure the smooth and efficient operation of the restaurant as directed by the restaurant manager or immediate supervisor.
Desired Qualifications:
- 1+ years of experience expediting in a high-volume restaurant.
- Working knowledge of the food menu and kitchen flow.
- Knowledge of dining room service procedures and functions.
- Ability to work in a team environment and take feedback well.
- Strong communication skills.
- Flexibility to work various shifts, including evenings, weekends, and Sundays.
